Passion Fruit Cooler (Zero-Proof)

A quick, non-alcoholic build of tropical passion-fruit purée, fresh citrus, and soda over full ice. No muddling is needed, making this a fast, high-throughput service drink with a tart, aromatic finish.

1. Pour 40 ml passion-fruit purée into the glass.
2. 40 ml passion-fruit purée
3. Add 20 ml fresh lemon or lime juice and 15 ml sugar syrup.
4. 20 ml fresh citrus; 15 ml sugar syrup
5. Stir briefly with a bar spoon to combine the purée and syrup evenly.
6. Fill the glass completely to the rim with fresh ice cubes.
7. Top with chilled soda water and give one gentle lift to combine.
8. Garnish with a fresh passion-fruit half floated on top or a citrus wheel; serve with a straw.
