Karak tea (spiced milk tea)

Applies to: Gulf-style karak — strong black tea simmered with milk, sugar, and spices.

  1. Simmer water with the black tea and crushed cardamom until deeply colored and strong.
  2. Karak is meant to be strong; a weak tea base will taste thin once milk and sugar go in.
  3. Add milk and sugar and bring back to a gentle rolling simmer, watching so it does not boil over.
  4. Simmer a few more minutes to marry the flavors, adjusting sweetness to taste.
  5. Strain through a fine mesh into pre-warmed cups; a little froth on top is traditional.
